Over 20 Vegan Recipes That Make Plant-Based Eating Easy


If you're thinking about going more plant-based but can't wrap your head around how to implement it into your lifestyle, I'll give you a few appetizing options that'll make you realize it is easier than you may have anticipated. I have compiled a list of some of my favorite vegan dishes. A range of flavors that are sure to please the masses. These recipes make it easy for me (and my family) to eat vegan. We don't do it all the time, but with some of these dishes, I am able to do it more often!


Cabbage And Cucumber Salad With Avocado Basil Vinaigrette


I saw something like this on TikTok and wanted to try it out. I changed up the original recipe a bit in order to utilize some things I already had in my kitchen. It turned out amazing! The salad is so crisp and delicious, it makes your body feel great while devouring.


1 Cup Lettuce of choice (I used Arugula)

1 Cucumber, Diced

1/2 Cup Chopped Cabbage

1/4 Cup Chopped Green Onions


Dressing


1/4-1/2 Cup Extra Virgin Olive Oil

Splash of Rice Vinegar

Handful of Spinach or Kale

1/8 Cup Red Onion, Diced

1 Tablespoon Cashews (or Walnuts)

1 Avocado

1/8 Teaspoon Garlic Powder

Juice of 1 Lemon

Salt and Pepper to taste


Combine your prepared vegetables for your salad in a medium bowl. Into a blender, add all of your dressing ingredients. Start with 1/4 cup of olive oil. Blend until smooth. Gradually add more olive oil if the dressing comes out too thick. Add your dressing to your bowl of veggies and thoroughly mix. Now devour!


Chickpea Noodle Soup With Lemon And Parsley


This was very tasty and filling. With a little cayenne pepper, it gives it that nice kick. I added gluten-free konjac noodles and kale. I prefer cooked kale over spinach because it holds its crunch nicely.

Blueberry Spirulina Smoothie


These flavors are surprisingly tasty. Spirulina is an algae that is not easy to stomach, but the health benefits are astronomical. My son loved this smoothie and had no idea how incredibly great it was for his system.

Chimichurri Quinoa Bowl


This is so fresh and light, yet filling. The flavors are wonderful together. I love avocado and brussels sprouts. My husband and I could pretty much drink chimichurri. I added craisins instead of golden raisins. I also added walnuts, because that's what I had on hand. I cannot wait to make this dish again!

Sweet and Spicy Roasted Cauliflower


I cannot get enough of this cauliflower. It pairs well with a lot of things. I've added it to a lot of different bowls. I use coconut aminos instead of soy sauce.

Thai Cauliflower And Chickpea Curry


This recipe is a crowd-pleaser. Added to rice, it's a wonderful one-pot dinner. I never have all of the ingredients for this dish, so I just use what's in my kitchen. It still turns out great.

Apple Broccoli Salad

I love broccoli salad in any form, but this recipe is so refreshing and tasty. The ingredients are simple, and it's quick to put together. This would be great for get-togethers. Nobody would even know it was vegan!

Vegetable Chickpea Curry


This is a great recipe for changing things up a bit. My husband does not like curry, but whenever I make it, he eats it ha. This is another dish that pairs well with rice. Just a hearty, comforting meal.

Spicy Black Bean Soup


I love soup. I could eat it every day. Especially when it's filled with spicy Mexican flavors and very satisfying. This is great for those lazy nights when you don't want to do a lot of prep. Your family will thank you for this one.

Chickpea Tacos

There is a little prep work with these, but the flavors are worth it. This was the first time I'd ever tasted vegan tacos, and I was pleasantly surprised. Even my husband enjoyed them. They are packed with plant-based protein and are great when paired with some easy Mexican rice. Ela Vegan has a lot of fun recipes to try out.

Beer Cheese Soup With Potatoes


So, I admittedly took this recipe and turned it vegan. Simply swap out chicken broth with vegetable broth. Also, use plant-based shredded cheddar (you can find it just about anywhere these days. You can even make your own). Lastly, replace the heavy cream with either coconut cream or another milk alternative. I love recipes that can be made vegan with a few swaps, and they really taste just as good.

Shepherd's Pie


My boys love Shepherd's Pie with beef, but they've learned to love it vegan, as well. The flavors are comforting. The lentils have quite a bit of protein and will satisfy your appetite. I usually leave the mushrooms out. Unfortunately, they do not do well in my household.

Peach Cobbler Overnight Oats


Peach cobbler may be one of my favorite desserts, so these overnight oats really do it for me ha! This is so simple to make the night before, then wake up and simply pop it out of the fridge. My husband used to make overnight oats quite a bit and take them to work. There are about a million different recipes you can try. I bet most of them can be made vegan (and gluten-free). This just happens to be one of my go-to's.

Buffalo Cauliflower


I LOVE buffalo wings, but I DO NOT like eating fried foods. This is the next best option. The cauliflower is baked in the same flavors and is a much healthier alternative. I've used both a wet batter recipe and one without. They are equally wonderful. Using a batter, though, is much more labor-intensive. This dish can be made vegan and gluten-free (if utilizing the batter) using a plant-based butter and gluten-free flour blend. You can also purchase or make your own vegan ranch for dipping. Tropical Orange Smoothie

This is a tasty breakfast or snack option that is sure to please. My son and I love these flavors. Smoothies are a great way to sneak added supplements and nutrients into your child's diet. I always use coconut milk instead of almond. You could even add coconut cream for a thicker and creamier consistency.

Roasted Red Pepper Hummus


I could eat hummus just about every day. I have quit buying the premade because almost all of them have bad oils in them such as soy, palm, safflower, or sunflower. It's so easy to make your own, and the taste cannot be matched.

Veggie Lo Mein


This is one of those dishes that is just so easy to throw together, and it's ready in less than 30 minutes. You can utilize whatever vegetables you have at the time. I love Asian flavors. When you make your own Asian dishes at home, they tend to be so much more savory than what you get at the restaurants. I cannot get enough of toasted sesame oil, so I make dishes like this pretty regularly. You can also find gluten-free Asian noodles at just about any grocery store now. For this recipe, I don't ever use mirin and only use coconut aminos instead of soy sauce. Still tastes great!

Glazed Stovetop Carrots


Sometimes I will simply make several different types of vegetables for dinner. This is a great addition for those nights. It's easy to just peel and slice your carrots, then throw everything in a pan to saute. Sometimes I like to add a little cumin for a bit of warmth.

Jalapeno Cilantro Corn Salad


Here's another great side dish to take to parties or BBQs, and nobody will even think about it being vegan. I am obsessed with cilantro, so this is a favorite in my household.

Sriracha And Lime Roasted Cauliflower Tostadas


Can I just say uhhhhhhh yum?! Not only pretty but amazingly tasty. Admittedly, this recipe is labor-intensive but SO worth it! I make my own refried beans. It is surprisingly simple. You literally pour a can of drained beans (we prefer black) with a little vegetable broth and Mexican seasonings in a saute pan over medium-low heat. Let the flavors simmer and meld together for about 20 minutes. Then, you simply mash everything and stir. Boom, that's it.

Oven-Baked Dijon Cauliflower


I use dijon in my cooking quite a bit, so this recipe really satisfies my tastebuds. It is very straightforward and quick. You could even chop this up and throw it on a bed of greens with some chopped almonds and a nice drizzle of balsamic vinaigrette for a whole meal. This even worked out well when I took it as a side dish for a picnic.

Cucumber Avocado And Tomato Salad


Here's another great dish to bring to parties, or to have as a light lunch. Healthy fats and a little protein will leave you fulfilled. This recipe is very easy to throw together and has a wonderful amount of flavor.

Potato Soup


This is another classic recipe that is simply turned vegan and tastes just as good as the original. Potato soup is so warming and hearty, especially when it's chilly outside. I love these flavors. Definitely one of those recipes that makes you sit back and think 'I CAN eat vegan and love it!'

Keto Cheesecake Fat Bombs


If you're on a low-carb diet, it can feel a little daunting to find great-tasting vegan dishes. Believe me, though, they are out there. This is one of them. I turned these cheesecake fat bombs vegan by using plant-based cream cheese and butter. They were wonderful!

Zucchini Noodles With Avocado Sauce


Zoodles are a staple if going low-carb. This is a quick and easy recipe to throw together that is completely raw. Zoodles are great because they can take the place of pasta in just about any dish. They also do not make you feel weighed down and bloated after consuming. I simply replace the pine nuts with either walnuts or cashews. Pine nuts are not in my budget.

Lentil Soup With Lemon And Turmeric


This is a great detox soup when trying to cleanse your body and/or lose weight. Lentils are packed with protein, and the lemon and turmeric will give this soup that healing potency.
