Vegan Chocolate Peanut Butter And Coconut Smoothie


Until I started veering more towards a vegan diet, I never knew how easy it actually was. I do not really miss dairy. Sure, I still consume it from time to time, but I don't long for it nor fantasize about it like I used to ha! It's also fairly easy to come up with meal ideas for the week not using meat. They are just as filling and give you a chance to broaden your pallet and test out different spice combinations. Sometimes I will think of meals that have a lot of meat or dairy in them and figure out how to make vegan versions. This recipe would be an example of that.


I am nearly obsessed with this smoothie recipe. You would never believe that it is vegan, gluten-free, sugar-free, and CHOCOLATE! I recently gave this recipe over to my mom's friend who cannot eat gluten, has a peanut allergy, and mainlines chocolate on the daily (haha). She simply replaced the peanut butter with almond butter and was very grateful for the insight.


Every ingredient I use is either organic or at least NON-GMO.


Ingredients


1/4 Cup Peanut Butter (only natural with no added sugar. Can use any nut butter)

1 Tablespoon Honey

1/4 Teaspoon Cinnamon

1 Teaspoon Stevia

2 Tablespoons Cocoa Powder

1 Teaspoon MCT Oil

3/4 Cup Coconut Milk (unsweetened)



Add all ingredients to a blender and enjoy. Adjust any of the amounts for flavor. Sometimes I add other supplements like Maca Root or Ashwagandha. I usually stick the smoothie in the fridge or freezer to get super cold and thick before devouring!
